Sri Lankan Black Pepper Pork

Pork is a staple in Sri Lanka whether it’s curry, devilled or stir-fry. Sri Lankans usually eat it with rice or roti which complement the meat. However, the curry can taste oily while the devilled dish can be salty. In contrast, this dish uses pepper and crunchy vegetables to make the dish lean. As a matter of fact, my husband thought it was chicken because of the clean and lean taste. He also liked the delicious middle ground between curry and stir-fry.


  • 500g of lean pork (shoulder preferred) cut into thin strips
  • 2 stalks of lemongrass (white part only) bruised
  • 2 banana peppers sliced into rings
  • 1 large red onion sliced into rings
  • 4 cloves of garlic chopped
  • 1 inch piece of ginger chopped
  • 4 green chillies sliced
  • 3 inch peace of pendan leaves
  • 20 curry leaves
  • 8 cloves pods
  • 8 cardamom pods
  • 1 inch piece of cinnamon
  • 2 teaspoons of black pepper (coursly ground)
  • 2 tablespoons of vinegar
  • 1/2 teaspoon of turmeric powder
  • Salt to taste
  • 2 tablespoons of vegetable oil
  • 1/2 tablespoon of corn flour


  1. Into a pot, add the pork, 1 tablespoon of vinegar, turmeric, 4 cloves, 1 stalk of lemongrass, salt to taste and 1 cup of water. Cover and cook until the pork is tender.
  2. Once cooked, separate the pork and preserve the stock.
  3. Add the corn flour to the warm stock, stir until it thickens and set aside.
  4. Crush the cinnamon, cloves and cardamom in a pestle.
  5. Heat the oil. Fry the pandan and curry leaves for a minute.
  6. Add the crushed cinnamon, cloves and cardamom paste.
  7. Add garlic, ginger and the remaining lemongrass. Fry until fragrant.
  8. Add the banana peppers, onions and green chillies. Stir-fry for 3 minutes.
  9. Add the pork, remaining black pepper. Mix well.
  10. Add the stock. Stir until the sauce is reduced.
  11. Add the remaining vinegar.
  12. Adjust salt to taste.
  13. Serve hot with white rice.
